Saigon is a city of migrants, and its breakfast shows it. This bowl travelled from Phnom Penh with Chinese-Cambodian families.

## At a glance

- **What it is:** Rice or tapioca noodles in clear pork broth with shrimp, minced pork, liver, quail egg and garlic oil.
- **Where:** All over Saigon, especially older shops in District 5 and District 10.
- **Typical price:** Around 40,000–70,000 VND a bowl.
- **Eat green:** Eat in. If you order dry noodles to go, bring a container – the broth otherwise comes in its own plastic bag.

## How to order

> “Cho tôi một tô hủ tiếu Nam Vang.”

One bowl of hủ tiếu Nam Vang. Say **khô** for the dry version with broth on the side, or **không gan** for no liver.

## Soup or dry?

The dry version (hủ tiếu khô) tosses the noodles in a sweet-savoury sauce with garlic oil, with the broth in a separate bowl. Many locals prefer it – try both.

## When to go

Breakfast is the peak, but many shops serve it all day and late into the night.
