## How to order

One bowl of mì Quảng. Many shops specialise in one topping – **mì Quảng gà** (chicken), **mì Quảng tôm thịt** (shrimp and pork) or **mì Quảng cá** (fish).

## How to eat it

Squeeze in lime, add chilli if you like, and crumble the sesame rice cracker (**bánh tráng mè**) over the top. Add herbs and sliced banana blossom from the plate, then mix everything together so the noodles soak up the broth.

## Not a soup

The broth barely covers the bottom of the bowl. It is meant to coat the noodles, not float them – so don’t ask for more unless you want to surprise the cook.

## When to go

Mì Quảng is eaten all day, but it is at its best in the morning. Many specialist shops close by early afternoon.
