Phở in Hanoi: how to eat it like a local

Phở is not just noodle soup. In Hanoi it’s breakfast – and at the best places, locals are already lining up before 7am.

How to order

“Cho tôi một phở bò tái.”

One phở with rare beef. Swap tái (rare) for chín (well-done brisket), or say tái chín for both. Add không hành if you don’t want spring onion.

Northern vs southern phở

Hanoi phở is about the broth: clear, clean and gently spiced, usually served with just lime, fresh chili and a little garlic vinegar on the table. Further south you’ll often get a plate of herbs and bean sprouts on the side and sauces to add yourself. Try both and pick a team.

When to go

Phở is mainly a morning dish in Hanoi. Many small shops open early and close once the pot is empty, so go before 9am for the best bowl.
