Bún chả in Hanoi: the charcoal-grilled pork lunch
Follow the smoke. Around lunchtime, small grills on Hanoi pavements start fanning charcoal, and the smell of caramelised pork fills the street.
Bún chả is Hanoi’s classic lunch: charcoal-grilled pork patties and pork belly served in a sweet-sour fish-sauce broth, with rice vermicelli and fresh herbs on the side. Expect about 40,000–70,000 VND, go between 11am and 2pm, order with “Cho tôi một suất bún chả”, and eat in to avoid the plastic takeaway bags.

How to eat it
You get three things: a bowl of broth with the pork and pickled green papaya or kohlrabi, a plate of cold rice noodles, and a basket of herbs. Take a little noodle and a few leaves with your chopsticks, dip them in the broth with a piece of pork, and eat. Add garlic, chilli or lime from the table to taste.
When to go
Bún chả is a lunch dish in Hanoi. The grills usually get going late in the morning and many shops sell out by early afternoon.
A presidential lunch
In 2016, Barack Obama and Anthony Bourdain shared bún chả and beer at Bún Chả Hương Liên in Hanoi for the TV show Parts Unknown. The shop is still busy – but almost any neighbourhood place with a smoky grill will do.
